This beef stock is great to use in any beef BBQ recipe. It will enhance any beef dish. It is especially good for injecting into your smoked brisket. You will not regret taking the extra time to turn your good BBQ into delicious BBQ.
This stock can be used to replace the stock you buy in the store for any recipe and you can freeze it for use later!

Beef Stock to enhance the flavor of your smoked beef
Equipment
- Stock Pot
- Fine Mesh Strainer
Ingredients
- 5 lbs. Beef Trimmings (meat and bones), for example, oxtails
- 2 Cups Chopped Onions
- 5 Cloves Garlic
- 1 Tbsp Peppercorns
- 1 Tbsp Salt
- 3 Leaves Bay Leaves Dry or Fresh
- 2 Cups Coarsely Chopped Celery
- 1 Tbsp Turmeric
- 1 Cup Coarsely Chopped Carrots
- 8 Cups Water
- 2 Tbsp Vegetable Oil
Instructions
- In a large stockpot heat the oil over medium heat2 Tbsp Vegetable Oil
- Add the Meat Trimmings and cook for approximately 20 minutes stirring occasionally5 lbs. Beef Trimmings
- Add the Onion, Celery, Carrots, Peppercorns, Salt, Garlic, and Bay Leaves and cook for another 10 minutes2 Cups Chopped Onions, 5 Cloves Garlic, 1 Tbsp Peppercorns, 1 Tbsp Salt, 3 Leaves Bay Leaves, 2 Cups Coarsely Chopped Celery, 1 Cup Coarsely Chopped Carrots, 1 Tbsp Turmeric
- Add the water. Do not forget to scrape the bottom of the pan with a spoon8 Cups Water
- Bring to a boil and then reduce heat to a simmer for about 4 hours. The amount of liquid should be reduced by half.
- Strain the liquid through a Fine Mesh Strainer.
- Completely cool the liquid before using it. Be sure to store it in the refrigerator. You can freeze any leftover stock for later use
