How to Make Rendered Beef Tallow

Beef Tallow is all the rage in the BBQ world. This recipe will show you how to make rendered beef tallow at home. While you could easily buy it (check price here), what is the fun in that.

The secret of some of the world’s best BBQ restaurants is to either use tallow as a binder for their brisket or to drizzle some on the butcher paper during the wrapping process.

My favorite use for beef tallow is for deep frying french fries. Back before the healthy eating types took over, McDonald’s used to fry their fries in tallow. They now use a crazy mixture of chemicals and plant-based oils to attempt to recreate the magic they had when using tallow. It just isn’t the same.

Beef Tallow

How to make your own beef tallow (liquid gold) to enhance your beef recipes and make use of your trimmings you would normally discard.

Equipment

  • 1 Large Pot
  • 1 Strainer
  • 1 Paper towel or coffee filter
  • 1 Large Bowl
  • 1 Kitchen Funnel
  • 1 Airtight storage containers

Ingredients
  

  • 4 lbs Beef Trimmings

Instructions
 

  • Place the Beef Trimmings into a large pot and simmer the trimmings for 2-3 hours while stirring the fat every 30 minutes until the fat is completely rendered. The remaining fat should be golden brown. If you are sensitive to fried grease smells in your home, and can do it, render the fat outside.
  • Remove the pot from the heat source and let it cool for 10-15 minutes, or until the rendered fat is cool enough it will not burn you.
  • Strain the contents of the pot into a large bowl. This is to remove the large solid pieces only.
  • Place either a single sheet of paper towels, or a coffee filter, into a strainer to form a filter1
  • Pour the contents of the large bowl into the filter you made in the previous step so the liquid drains onto your storage container. Should any fine particles make it into the storage container repeat this step again.
  • The tallow should last 3-4 months.

Notes

Please note the liquid could range in color from a golden color to a dark brown color. This is normal. As the fat cools, it will turn white.
